Pine Nut Couscous

A perfect pairing with my Lamb Kebabs and Mint-Parsley Yogurt sauce.


  • 2 tablespoons butter

  • 3 tablespoons pine nuts, a generous palm full

  • 2 cups chicken stock

  • 1 lemon, zest and 1 tablespoon of juice

  • 2 cups couscous


  • Add butter and pine nuts to a medium low pan, toast in saucepan for 8-10 minutes until nuts are golden brown.
  • Add 2 cups stock and bring to a boil.
  • Remove pan from heat, season with salt and pepper. Add zest and juice from lemon.
  • Add couscous, stir once and cover pan.
  • Let stand 5 minutes.
  • Fluff with a fork.
